diabetes and meatloaf

I’ll check the recipe for the meatloaf. I’m tired of plain hamburgers. :-)
I had a checkup today and the doctor put me on gloucophage (sp?). She said Atkins wasn’t a bad diet, but I may have to add in a few more than 20 carbs to help keep my sugars level while I adjust to the medicine. But to follow the basic principles, just not let it drop too low. I’m considering switching to the OWL which allows for a few more carbs. For 50 carbs a day I can eat 1 slice of whole wheat bread with my meals and everything else I have been eating. I know I wouldn’t lose as quickly, but I’m hoping I could still lose. Does anyone have any suggestions?

cheese crisps

Here’s a good snack in moderation:
Parmesean crisps
1 to 1 1/2 pound block Parmesan cheese
optional: fresh herbs, a pinch of cayenne and/or fresh ground pepper
Pam cooking spray
Grate entire block of Parmesan. Spray baking sheet with Pam spray and arrange
grated cheese in flat, cookie-sized circles. Use less than a quarter cup cheese
per crisp.
Bake in a 425-degree oven until cheese just barely begins to brown, about 3 to 4
minutes. Remove quickly to a cookie rack for cooling, then blot on paper towel
if needed. Can be made ahead and stored in airtight containers. Output varies by
weight of cheese and size of circles. They crisp up as they cool.

todays choices

Today I had:

8:30 AM 2 eggs with 1/4 c browned ground chicken and 1 oz Sharp cheddar cheese made into an omelet cooked in butter

9:50 AM 4 dried pepperoni chips

10:20 AM pork rinds

NO idea why but had munchies so bad and didn’t want to totally blow it so ate foods that are legal but ones I probably didn’t really need.

1:00 PM 1 chix thigh (leftover from weekend grilled over open fire so kind of Cajun style

pork rinds and a string cheese.

6:15 PM salad, 1 T dressing, 1 slice tomato, 1/2 cup cooked broccoli with butter, chili kabobs (found recipe on Atkins site which said 2 g Carbs) finished off with 1/4 cup gelatin and some cream mixed together.

so how do I know what the total carb amount is? Like how much is a cup of salad? I am sorry for all the questions. Once I get how to total things I will be ok. It is not so easy to go from counting points (WW) to this totally different kind of thinking process :0)

Ed-Induction

Hi Ed-
There’s nothing that says you can’t freeze foods for the induction phase.
Pre-cook bacon, hamburgers, chicken wings, sausage or buy some or
all of this stuff pre-cooked. It takes seconds to nuke it and have it ready
to eat. Also sliced roast beef and pork rinds. Hard boiled eggs….
All kinds of goodies like that are available. Just prepare ahead for these
snacking emergencies.
Your about the only one that picked up on the “ose” for Splenda. Good
question. That would be a good one for the Atkins website personnel.
Maybe we could get an answer from them. :-) I’m sticking to Sugar Twin. Its easily available, comes in bulk or packets
or brown sugar and is relatively inexpensive compared to the newcomers.
Including & especially Splenda and Stivia. If you are able to get
saccharin, that would be the ideal sugar sub.

hello there!!! i just joined this group. i am starting the atkins
diet on monday. i have not read through the messages yet, so i
appoligize if this has already been covered. i found these on ebay
(ketone strips). i’m wondering if any of you use these and what you
think of them. also if you found them helpful in your weight loss.

Chicken wings

Does anyone on the list have a recipe for chicken wings that they
use or would recommend? I would like to come up with a few but have
never made them myself before. I need a lo-carb food like wings to
eat when the DBF decides to order in the entire Pizza Hut menu grrrr

carb counts

I went to the store last night to stock up on some things and I had a horrible time with carb counts. How do you figure them? I now about subtracting for the fiber but it seemed like so many items were high counts still. Is there a formula to use?

Atkins suggests green onions/scallions. Most onions have sugar in them. I
buy a couple of bunches/bags of scallions, trim and cut them up into small
pieces and freeze them. The use them in whatever calls for diced onions.
I usually use them along with a few diced peppers pieces in an cheese
omelet.
Almost everything you eat will have carbs even if it’s only a trace. Even
those trace items, when overdone, can add up to an over abundance of carbs.
A little common sense goes a long way on this diet. I should say “Way of
Life”.

To be on the safe side, purchase Atkins supplement(s). Most anything in
pill form contains some type of sugar and/or starch. Read the ingredients
on some of these vitamins and you will see for yourself.
