Going to start Feb. 1st

Saturday, April 30th, 2005

My husband and I are planning on starting Induction on Feb 1st. All
the girls in my office decided to start at the same time so we can
support each other and I convinced my hubby to give it a shot. I am
trying to get myself geared up for this, because my favorite foods
are pasta, rice, and potatoes. I think I am finally ready to commit
myself to changing my lifestyle. I am aiming at losing 25-30 lbs
and my husband is aiming for 50.
Does anyone have any tips that can help us out? I’ve been gathering
information for the last two weeks… any advice would be greatly
appreciated!!!
Thanks!

Chinese food question

Saturday, April 30th, 2005

I was bad today for the first time in almost three weeks on
Induction, so let me know just how bad I was…
I went to a Chinese Buffet today. I was good in a the way that I
steered clear of ALL noodles and rice dishes, BUT I had a cup of Hot
& Sour soup, 1/2 Veggie Egg Foo Young patty, some Chicken with
Mushrooms in sauce, some Beef with Mixed Veggies in Sauce, and two
Terriaki Chicken strips.
I can only imagine the sauces were horrible, and I hope they don’t
knock me out of ketosis.
What chinese type foods are the least harmful to eat?

Is there a drug store I can buy the strips from, or do I have to
order them online?
Thanks,
Andrea

Recipe: Chocolate Poufs

Friday, April 29th, 2005

This is a recipe I adapted from the Atkins website.
Chocolate Poufs
3 large egg whites, at room temperature
1/4 cup cocoa powder (chocoholics, be sure to use Hershey’s European
Cocoa. It’s worth it!)
1/2 teaspoon vanilla extract
1/8 teaspoon cream of tartar
10 packets Splenda
1. Heat oven to 200° F. Line a baking sheet with aluminum foil or
parchment paper. In a large bowl, with electric mixer at high speed,
beat egg whites until soft peaks form. Beat in cream of tartar and
beat until stiff. Beat in Splenda, little by little. Sift cocoa
powder into egg whites and beat, being careful not to send the powder
flying around the room!
2. Fill a dessert decorator (like the Wilton cake decorator) or
piping bag, and attach the largest tip. Pipe 2-inch wide “poufs”
onto baking sheet.
3. Bake poufs on center oven rack 1 1/2 hours, until golden and very
dry. Turn off oven and let poufs dry in oven until cool. Carefully
peel off foil.
My version made about 25 poufs. According to Fitday, the whole
recipe is 133 calories, 15 gr. net carbs, 14 gr. protein, 3 gr. fat,
815 mg. potassium (good for those with leg cramps), 50% RDA
riboflavin, 37% selenium, 35% magnesium, 24% phosphorus, 23% iron,
12% zinc, and 11% calcium. Very healthy, especially for those not
taking the supplements.

Sweet pickles!

I found Mt Olive Sweet spears at my Super Walmart yesterday. *0* carbs per
serving!! They are made with Splenda!! I am in love!! I like to make my tuna
and chicken salad with sweet relish, but, regular relish has so many carbs that
I can’t use as much as I like. Now though, I can!! I just had tuna salad for
lunch. YUMMY! Just wanted to share!
I also have tried the Carb Solutions Peanut Butter (skippy) and it is yummy too!

Diet V8

Friday, April 29th, 2005

I was in the store today and noticed that there is a diet V8 Splash
juice drink now. It’s made with Splenda and has 3 carbs per serving
(2 servings per bottle). I’m excited. I was a HUGE fruit eater and
miss it terribly. Half a bottle of this a day will definitely take
the edge off!

Atkins pancakes

Thursday, April 28th, 2005

I just finished making the Atkins pizza, it wasn’t like the real thing
but was OK. Think I made it in a too small a pan, didn’t have the size called
for therefore it was a little thick. The topping was good. Sauce, mushrooms,
onions, cheese and of course sausage.
Don’t think I’ll make it again, I’ll just wait and have a real pizza after I
loose much more weight. Kathy
