i have an awesome recipe for meatloaf using ground flax and i’m sure its made
the rounds several times here, so if you are interested, send me a short
email and i will send it to you. its the best meatloaf i ever made, even my
skinny
husband loves it and my low carb friends all want the recipe after eating it.

    hi again,
    since another person asked, i will gladly post it.
    3 pounds ground meat (meatloaf mix- beef,veal,pork) but doesn’t have to be
    mix
    1C flax seed grind in coffee grinder (or buy the ground)
    1/2 medium onion chopped
    1/2 med green pepper chopped
    1/2 med red pepper chopped
    handful of mushrooms, chopped
    LC ketchup i use walden farms 0 carb
    parmesan cheese
    1 ex large egg
    1C heavy cream
    salt, pepper, garlic, italian seasoning, dry mustard all to taste and a
    dash of worsteschere sauce
    oil for sauteing
    saute` the veggies in oil (i use canola oil) till they are soft. let cool a
    bit, add the meat to that mixture, mix well, add the seasonings, the beaten
    egg, the ground flax and the cup of heavy cream and when all is mixed well, turn
    into a 9×12 pyrex.. or baking dish of your choice. Bake for 50 minutes,
    covered in foil. remove from oven, put ketchup and parmesan cheese on top of
    meatloaf and continue baking UNCOVERED for another 15 minutes.
    this has GOT to be the juiciest meatloaf ever. hope you all enjoy as we do

    p.s. sorry i do not have the exact carb count, but it is low, i am on
    induction levels and i have no problem eating this. it is a rather large
    meatloaf,
    so it serves 16
