Vegetable Question
Hello — I am almost done with 4 weeks of induction. I haven’t done great,
although being very diligent with my food and water intake. I love artichokes
and enjoy having them for lunch with some melted butter. They are 6.9 carbs,
though. Can I count all of these carbs toward my 10 total carbs for veggies
in a day? (meaning I would only have 3.1 carbs of veggies left for the day)
Can you go over 10 carbs for veggies (while still staying at 20 or less)?
Thanks for any help you can give me!

I’ve got a jar of marinated artichokes from Costco or Sam’s Club, don’t
remember which. It says that three pieces, or one ounce, has 1 carb, and 1 gram
of
fiber. That’s a net of zero. I snack on them from time to time. Are you
subtracting the fiber from the total count to arrive at your net carbs? That’s
crucial, as fiber doesn’t count toward the total of 20.
Ed,
The Atkins book says net carbs for a whole artichoke is 6.9. I’m just
wondering if it’s ok to count that toward my 10 veggie carbs - I could eat an
artichoke every day, but concerned I wouldn’t be getting many other veggies.
