corned beef and cabbage

I am making corned beef and cabbage for a dinner I am going to
tonight and after reading Dana Carpenter’s 500 Low Carb Recipes
Cookbook, realized I can make it low carb. I adjusted her recipe to
the number of people eating and only made some slight changes. I
put 8 quartered small turnips on the bottom of the crockpot, covered
it with sliced onions the the corned beef, sprinkled on the
seasoning packet that comes with the meat and added 2 cups of water
the covered it all with cubed cabbage chuncks. Put on low and have
heated it for about 10 hours. It smells great and will be an
awesome low carb meal that I can share with others. I am bringing
soda bread for the carb loving friends I have but I honestly would
choose turnips over soda bread any day. The turnips are a good sub
for boiled potatoes. I plan to cook this again on St Patricks Day
and freeze the leftovers for later meals when I don’t have time to
cook an Atkins friendly meal. I also will try this with a beef
roast too. Dana’s book sometimes calls for strange ingredients but
you can find most of them at any health food store and the recipes
are easy and user friendly. They also are mostly foods I enjoy
eating. I highly recommend her cookbook. I have not tried the
mashed cauliflower but I am looking for a recipe that matches the
cauliflower I had at Ruby Tuedays. It had quite a zing to it and
tasted similar to spinach dip. BTW some stranger came up to me
while grocery shopping and complimented my looks. Not hitting on me
but just being nice. It made my day and I realized that the
weightloss is really starting to show. I also am wearing jeans a
size smaller so my confidence is starting to go up. My co-workers
this week are all asking me how to low-carb and some are even
starting Atkins. Sure makes me feel good. Well, enoough for my
update, hope some of you can enjoy the corned beef and cabbage
recipe like I will be doing. It just sounds like something that
will hit the spot and sure is good to have a holiday I can really
particiapte in even though I have not one ounce of Irish. I just
call myself Irish for a day :) Michzoo
