Something Yummie I had..
Hi,
I am a BIG fan of shell fish of any kind.. I love oysters, but fresh ones seem
to have a good many carbs. I found canned oysters (whole ones) that have 2 carbs
for 1/2 a can. Can is a smaller one, but still enough for one person. I love
them dipped in scrambled egg and floured and fried.. this is how I fixed mine
for dinner last night that way..
I scrambled an egg in a bowl and dipped the oysters in that and then I floured
them in Atkins pancake mix! I fried them in olive oil. Yes I had cocktail
sauce.. made it with 2 tbs of Ketch a Tomato and horseradish sauce. I was in
heaven!!!! LOL! I think that it is on the menu for lunch today too!!! LOL!!! I
had a salad with it and I was livin’! LOL!!!
I have not tried the coolwhip, heavy cream and jello concoction yet, but I plan
to soon! I am learning all kinds of neat things here.. I also want to try the
cauliflower fake mashed potatoes too.. but I am going to boil my cauliflower in
chicken broth and then mash them with some sour cream rather than cream cheese.
I have also thought about just mashing them by themselves, putting them in a
small oven safe dish and digging out a little hole in the center and putting a
dalop of sour cream in there and then covering the top with cheddar cheese and
sprinkeling the top with some garlic powder.. there is a restaraunt in
Charleston , WV (actually it is in St. Albans, WV just west of Charleston)
called Rivers Edge and they served their potatoes like that and it was called a
Potato boat. They were soooo good!!!! *sigh* I loved that place! LOL! I am from
WV originaly. : )
