Have you all checked out www.lowcarbluxury.com ? It has quite a few
recipes. I have tried some. The fried deviled eggs recipe sounded so
good so I tried it and I hated it. Doesn’t mean someone else might
like it. There are dessert and shake recipes too.

Hi Robi,
I apologize for not saying where that article came from…(it was from my
G.I.Diet newsletter)…which takes other things into consideration beside
Atkins.
I was more interested in the jelly(jello) type foods that everyone seems to
love(and I can’t get here in Holland). It gave one reason why some of Atkins
followers may not be losing as much if using jello as a snack.
Just more things to think about..lol. But I will try to remember to include
my source when sending things that I find interesting, and want to share
with others.

Hi,
I am a BIG fan of shell fish of any kind.. I love oysters, but fresh ones seem
to have a good many carbs. I found canned oysters (whole ones) that have 2 carbs
for 1/2 a can. Can is a smaller one, but still enough for one person. I love
them dipped in scrambled egg and floured and fried.. this is how I fixed mine
for dinner last night that way..
I scrambled an egg in a bowl and dipped the oysters in that and then I floured
them in Atkins pancake mix! I fried them in olive oil. Yes I had cocktail
sauce.. made it with 2 tbs of Ketch a Tomato and horseradish sauce. I was in
heaven!!!! LOL! I think that it is on the menu for lunch today too!!! LOL!!! I
had a salad with it and I was livin’! LOL!!!
I have not tried the coolwhip, heavy cream and jello concoction yet, but I plan
to soon! I am learning all kinds of neat things here.. I also want to try the
cauliflower fake mashed potatoes too.. but I am going to boil my cauliflower in
chicken broth and then mash them with some sour cream rather than cream cheese.
I have also thought about just mashing them by themselves, putting them in a
small oven safe dish and digging out a little hole in the center and putting a
dalop of sour cream in there and then covering the top with cheddar cheese and
sprinkeling the top with some garlic powder.. there is a restaraunt in
Charleston , WV (actually it is in St. Albans, WV just west of Charleston)
called Rivers Edge and they served their potatoes like that and it was called a
Potato boat. They were soooo good!!!! *sigh* I loved that place! LOL! I am from
WV originaly. : )

03/12/04 - Weigh-In - Plataeau Busted

Whew! Well the plateau got finally busted!
What can I say.
I had to go back read up DANDR again and check up and try to discover
EXACTLY where I was either slacking, slipping, sliding, or even cheating.
Here’s what I found.
1.) Candida! I had decided to put off dealing with the candida until after
I was on OWL, but DANDR clearly states Candida will interfere with
Induction, so I’ve started taking different herbs, and vita-nutrients to try
to control the Candida. I’m also considering do a a series of liver and
kidney flushes which I hear will also help bring the Candida under control.
2.) Water. I simply wasn’t drinking enough water, I checked the various
formulas to calculate how much water and I discovered I should be drinking
almost 2 gallons of water per day!
3.) Exercise. true confession… here I was really slacking off on the daily
exercise…. Now I am using a Aerobics VHS Video Tape exercise course that’s
great and takes only 15 minutes. It makes me break a sweat and I feel great
afterwards! Eventually I’ll “graduate” to 30 minutes and then 45 minutes
aerobic exercise…
4.) Portion control even though I was being careful what I ate, here and
there I was a little sloppy how much I ate….I now measure and prepare my
food in advance and refrigerate all my meals in little ZipLock
containers…Works great!
5.) Coffee….I was allowing myself coffee with milk and coffee with
cream…. Coffee messes with the blood sugar and even the tiniest amount of
milk can knock you off induction.
6.) Those DAMN SHAKES! Everytime I try on of those damn shakes the Candida
flares up! I don’t care what it says on the label - those pretend sugars are
sugary enough for the Candida! So from now on I make my own shakes from
scratch with NO SUGAR! and MAKE sure that there is NO SUGAR OF ANY KIND in
any of the powders and additives I’m using!
7.) Attending Overeaters Anonymous meetings. ANA is just a food plan, and As
DANDR says, I’m ADDICTED to carbohydrates so I need extra help to deal with
the physical, emotional, psycholigical, and spiritual aspect of my
“recovery” from Carb. Addiction. For the last few weeks I’ve attended at
least one OA meeting per week and got myself an OA “sponsor”.
8.) The correct Vita-Nutrients. I had actually being trying all kinds of
differrent vita-nutrients. I re-read DANDR to check and see what I was
missing and I found that there were several reccomended vita-nutrients that
I wasn’t taking…
9.) Medical supervision. I’ve had some tests and there was protein in the
urine. I’m trying to locate a Atkins friendly doctor who can also advise me
on this situation.

corned beef and cabbage

I am making corned beef and cabbage for a dinner I am going to
tonight and after reading Dana Carpenter’s 500 Low Carb Recipes
Cookbook, realized I can make it low carb. I adjusted her recipe to
the number of people eating and only made some slight changes. I
put 8 quartered small turnips on the bottom of the crockpot, covered
it with sliced onions the the corned beef, sprinkled on the
seasoning packet that comes with the meat and added 2 cups of water
the covered it all with cubed cabbage chuncks. Put on low and have
heated it for about 10 hours. It smells great and will be an
awesome low carb meal that I can share with others. I am bringing
soda bread for the carb loving friends I have but I honestly would
choose turnips over soda bread any day. The turnips are a good sub
for boiled potatoes. I plan to cook this again on St Patricks Day
and freeze the leftovers for later meals when I don’t have time to
cook an Atkins friendly meal. I also will try this with a beef
roast too. Dana’s book sometimes calls for strange ingredients but
you can find most of them at any health food store and the recipes
are easy and user friendly. They also are mostly foods I enjoy
eating. I highly recommend her cookbook. I have not tried the
mashed cauliflower but I am looking for a recipe that matches the
cauliflower I had at Ruby Tuedays. It had quite a zing to it and
tasted similar to spinach dip. BTW some stranger came up to me
while grocery shopping and complimented my looks. Not hitting on me
but just being nice. It made my day and I realized that the
weightloss is really starting to show. I also am wearing jeans a
size smaller so my confidence is starting to go up. My co-workers
this week are all asking me how to low-carb and some are even
starting Atkins. Sure makes me feel good. Well, enoough for my
update, hope some of you can enjoy the corned beef and cabbage
recipe like I will be doing. It just sounds like something that
will hit the spot and sure is good to have a holiday I can really
particiapte in even though I have not one ounce of Irish. I just
call myself Irish for a day :) Michzoo

Interesting thoughts on sugar free products

There are a couple of popular issues that keep cropping up in readers letters
namely sugar free dairy products, particularly yoghurt and ice cream, and sugar
free puddings.
While I use the term “sugar free” to describe yoghurt, a better description
would have been “sweetened with a sugar substitute and containing a small amount
of naturally occurring sugar arising from the fruit content”. That’s quite a
mouthful and the term “sugar free” though technically incorrect, is simply a
more convenient term. The important thing is that the amount of sugar is only a
fraction of the sugar that is normally added to regular flavoured yoghurts.
Unfortunately many manufacturers simply bump up the amount of sugar as they drop
the amount of fat so read your labels carefully.
With low fat ice cream look for brands that contain a sugar substitute and / or
with the words “no sugar added”.
The other issue concerns low calorie or sugar free deserts either the jelly type
(Jell-O) or cooked/instant puddings. The former has absolutely no food value and
digests quickly. In other words red light. While this will have no impact on
your weight it will do nothing towards making you feel satiated which is one of
the principal reasons for eating green light foods.
The puddings, cooked or instant, are little more than flavoured cornstarch, a
high GI ingredient which again digests very quickly and provides minimal
nutrition. The only benefit from these puddings is that most of them are made
with milk. I would much rather you consume your milk through other low GI dairy
products such as yoghurt, cottage cheese or sour cream. All make delicious green
light desserts especially when you add some fruit.
Talking of delicious green light desserts, this month’s reader’s recipe from
Gerda is an excellent example:
Raspberry Dream
(serves 4-6 for those in Phase 1; serves 4 for Phase2)
3 cups fresh or frozen raspberries/mixed berries (thaw them first)
2 Omega III eggs (split)
1 cup no fat sour cream
½ cup low fat have cream cheese (Philadelphia Ultra)
a few drops of almond essence
1/3 cup Splenda
1. Preheat oven to 375°F
2. Lightly grease 9″ pie dish.
3. Cover the bottom of the dish with the berries
4. Mix in a separate bowl the 2 egg yolks, the sour cream, half the sweetener
and almond essence until thick and fluffy.
5. In another clean mixing bowl, beat the two egg whites until it forms stiff
peaks and has become shiny, while gently adding the remaining sweetener a bit at
the time and mixing well.
6. Add the egg white mixture to the egg yolk/cream cheese mixture; stir it in
quickly using a metal spoon.
7. Pour the combined mixture over the raspberries.
8. Bake for 30-35 minutes at 375°F, until it has risen and the middle is
slightly set.
9. Serve at room temperature..

Legal Veg. Soup

Hey all, A friend of mine gave me a soup recipe out of her weight watchers
book that only has 8g total carbohydrates, 2.4g dietary fiber, 42 calroies
and 3g protein.
GARDEN VEGETABLE SOUP
2/3 C sliced carrot
1/2 C diced onion
2 garlic cloves, minced
3C fat free broth (beef, chicken or vegetable)
1 1/2 C diced green cabbage
1/2 C green beans
1 Tbls tomato paste
1/2 tsp dried basil
1/4 tsp dried oregano
1/4 tsp salt
1/2 C dried zucchini
Spray saucepan with nonstick cooking spray - saute onion & garlic over low
heat until softened (approx. 5 minutes)
Add broth, cabbage, beans, tomato paste, basil, oregano and salt. Bring to
boil. Lower heat and simmer, covered, about 15 min. until beans are tender.
Stir in zucchini and heat 3-4 min. Enjoy!

Pain of Exercise

Hi Rosi, I had to laugh at the subject matter…the pain of exercise. I
was determined to do some exercise besides working my computer fingers, so I
started walking an hour a day. I found someone to walk with, and believe me,
that is the best thing I did…I don’t want to not show up, so I go. But the
pain came from rubbing blisters on two toes. Oh, dear, I considered
amputation, it was so bad…(well, almost…lol). I have them better, and
just got back and have a new one starting in a new place. I won’t give up,
but I will smile as I tape every place I can on the feet.
I get so upset when I hear of people in America who have no insurance. Our
money is going everywhere to help every other country, and yet there are so
many Americans without so many things. “The rich get richer…” well, you
know the old saying.
Keep up the good work…and thanks for being there for all of us. Barbara.

Protein in Urine

Hi everyone…regarding the protein in the urine, I just heard on the
morning news that some doctors are saying that they are seeing more gout in
men who are on the Atkins diet, because of the excess protein in the diet.
My first thought was, “I am not eating any more meat, i.e. protein than I
do on any other way of eating.” Hmmm, and how many are “we are seeing
more…”? One, two, or 20? So, I’m not sure if the protein is at fault,
or if they have even did any tests on this to prove such a statement.
If concerned, I think asking Atkins Center itself would be the best bet.
Atkins hasn’t been around long enough to do long-term testing, and for those
who have been on it for years, have not complained of Gout. So, I’m thinking
this could be something the doctors are jumping on for one more reason to
discredit Atkins. But, on the other hand, it doesn’t ever hurt to check
something out.
Again, my personal thinking is that, if one counts how much protein they are
eating, it isn’t any more than a normal person….Atkins cuts out white
things…i.e. white flour, sugar, etc…..insists on everyone drinking their
quota of water, and to eat vegetables, adding them slowly after two weeks.
20 years ago, my doctor said “I’m surprised you don’t complain of gout; your
urine is full of protein.” I certainly have never had one day of gout
problems, but more importantly, was eating carbos like they were to be
banned the next day. Something else was causing the problem and being too
busy to care, he never did investigate further. (And I, being too busy
enjoying life, didn’t pursue it…lol).
Bottom line…get a second opinion, and research everything…I am trained
in the medical field, have many friends who are doctors, and definately do
not trust every word they say. I remember stumbling through my first year
with patients, reading books at night to try to learn as I went along. (No,
I’m not a brain surgeon..) Doctors, therapists, and everyone else just can’t
be taught all they need to know, and just until recently, the public thought
all doctors were Gods. Now we know they, too, are human, so treat your body
like it is yours (lol) and even if you decide Atkins is the culprit,
continue to count those carbohydrates for the rest of your life. They do
more damage than any 4 oz piece of meat!
