Cajun Style Meat Loaf

From: Nancyâs Cozy Kitchen Low Carb Cookbook
1 lb ground pork
1 lb ground beef
2 eggs
½-cup water
½-cup of diced onion
2 to 3 chopped cloves garlic
½-teaspoon Nancyâs spice or any Cajun spice
¼- cup almond flour
¼-cup Parmesan cheese
½- cup parsley flakes
Mix everything well. Shape into loaf pan.
Cook on 350 for 1 hour or until juices flow clear
Variation:
Flatten meatloaf out on saran wrap and add mozzarella cheese then slowly roll
meatloaf and pitch ends to form into a loaf. This I call Surprise Meatloaf
and my family loves it.

Hi,
I just want a little clarification on the carb-fiber thing.
Am I supposed to subtract the fiber from the carb count and is that just for the
particular food eaten or can I use the daily carb count minus the daily fiber
count?
I don’t remember doing it this way last time (6 years ago).

Fat Fast UPDATE

I am drinking my 100 oz water a day. I just thought that you could have the
acceptable drinks during the Fat Fast. It didn’t say you can’t. I just wanted
some flavor
Here is why I tried the Fat Fast:
I started Atkins May 31st of 2003. I weighed about 180. My goal is 140.
My first 2 weeks I lost 15 lbs. The weight came off pretty good for a couple
of month and then I stalled at 147 in August. I stalled for 4 months and then
I gained 8 lbs back up to date. I was on a pretty strict induction. So I tried
the Fat Fast.
Here is my progress with the Fat Fast. Start weight 155 lbs
I started the Fat Fast April 9th. I ate only the allowed foods until I had my
diet Rite on April 12th. I stayed on Stage 1 of the Fat Fast until April
14th. I lost 8 lbs.and was NOT hungry a bit!!!!!!!!!! I started Stage 2 of the
Fat
Fast April 14th and am only eating the allowed foods on this. As of today I
weigh 145 Lbs.
This is the closest I have been to my goal weight. I hope I hit it in the
next week or two.
I am going back on a strict induction Monday, April 19th.

Water Water Water……always drink your water!!….whether you are on
induction…owl…maintenance….fat fast….eating Easter
candy…..LOL…..For good health you need to drink the water, it’s not just
for losing weight…..

Baked Cheesy Eggs

In a ramiken, put 1 T butter, break in an egg, pour 1 T. heavy cream
over the egg, salt, pepper, sprinkle 1 T. grated parmesan over the
top. Bake in a water bath at 350 degrees until the egg yolks are as
firm as you like them (usually about 15 minutes for me). I then take
it out and let it set for a few minutes. I like to stir this up and
dip pork rinds in it when I eat it. A super yummy way to put some
variety into how you eat eggs.

Cream Cheese Pancakes

8 oz cream cheese, softened (6.4 carbs
3 eggs (1.8 carbs)
2 T protein powder (.7, depends on brand) (can sub Atkins Bake
Mix)
2 t imitation vanilla (.2 carbs) I USE DAVINCI French Vanilla —
NO CARBS
3-4 packets of AS (I use Splenda) (3-4 grams) (Note: I use liquid
Splenda and cut carbs further ~ Shelley)
Whip the cream cheese until smooth and creamy. Add the remaining
ingredients slowly. Put a little oil or butter on griddle and
heat it up, pour in the batter and fry up like pancakes! You want the
pancakes to be full of dry holes before you flip ‘em. If they’re not
ready to flip,they’ll break apart. Top with butter and DaVinci
pancake syrup,or cream cheese and/or sugar free jam and enjoy!

Buffalo” Chicken

“Buffalo” Chicken
2 chicken breasts, bone-in
1 Tbsp olive oil
2 Tbsps chili mix (could make your own from chili powder, salt, pepper, etc.)
1 Tbsp celery seed
2 oz cream cheese (I was out of blue cheese, or I would’ve tried that!)
Rinse chicken thoroughly and pat dry. Rub oil into breast - I also left the
skin on - and sprinkle chili mix and celery see over and under chicken. Top
with a cube of cheese and broil or bake until done (I roasted mine for about 35
minutes at 350 degrees F).
Also good cold!

Sugar Free “Jello”

“Someone posted this here a while back, and I tried it with good
success. I bought a pack of those 1/2 cup Glad-type storage
containers. They make a perfect-sized serving similar to the Jello
in the little cups.
Sugar Free “Jello”
2 packages Koolaid, any flavor*
3 packets Knox gelatin
4 cups water
1 cup Splenda
Put 2 cups water in pan and sprinkle gelatin on to soften. Add
Koolaid and Splenda. Turn on heat and bring mixture to a boil.
Take off heat and put 2 cups cold water in and mix well. Put in
bowl or mold and let set in refrigerator.
* be sure and get the plain koolaid, not the sugar free”
