induction flour substitute
Hi. I bought some “Thick it Up” from GNC. It is cheaper than “Thick -n- Thin”
which I *think* is by Atkins. Both are a combination of guar gum and xanthan
gum, which are some of those words that you never knew what the heck they were
on the labels of your pre-Atkins processed food. Well, they are naturally
occurring plant based substances that work as thickeners. I have only tried
mine once, but it worked VERY well. Do be careful because a little goes a LONG
way. I made gravy to go over a pork roast and 3 tsp for the whole crockpot full
of juices was too much. We still ate it, and it was yummy, but would have been
better with only 1 or 2 tsp. If you are doing strict Atkins induction, this
thickener is not on “the list”. But I suspect if you searched the Atkins recipe
site there would be some recipes there that are marked okay for induction that
contain their thickener. I have never heard anyone say this caused them to
stall.
