Chicken ‘Fajitas’

Serves 4
2 skinless chicken breasts
1 Tbsp Mexican Taco seasoning
8 full-size slices Swiss cheese
1/2 cup lettuce, chopped
1/4 cup shredded Jack cheese
Hot sauce to taste
Salsa Verde to taste
Rub chicken breasts with taco seasoning and let stand for 10 minutes.
Heat heavy pan or a cast iron skillet; cook the chicken till slightly
blackened but not overcooked (about 3-4 minutes per side). Cut into
1/2 inch strips and add desired amount of sauce.
To assemble the enchiladas:
Place a slice of Swiss cheese on a flat surface and place lettuce
about 3/4 of the way down. Layer chicken strips on top and sprinkle
with shredded Jack cheese. Do not overstuff. Fold the lower portion
up, tighten as much as you can, then continue rolling the rest. Cut
it in half on a diagonal and serve with more hot sauce or salsa
verde.
