Coconut Macaroons
1 cup shredded unsweetened coconut,
7 packets splenda (or any artificial sweetner),
2 egg whites,
1/2 cup heavy cream,
1/4 tsp vanilla extract,
1/2 tsp almond extract
Mix cream with sweetner and extracts.
Add coconut mix well, let stand 1 hour.
If then, mixture is to dry add small amount of cream.
Preheat oven to 350 degrees. Whip egg whites till peaks form.
Fold whites into coconut mixture. Using tsp place 16 even amounts
on greased cookie sheet. Bake until slightly brown, 12-15 minutes.
