Green Chile Beef
1.5 lbs good ground beef
1 tsp crushed garlic
1/2 med onion, diced finely (about 2 oz)
1-2 cans chopped green chiles, drained
1.5 cups finely shredded cheese - cheddar, jack, colby, whatever you like
Brown ground beef, garlic and onions over med. heat. Add green chiles. Stir
well. Add cheese, turn heat to very low. Let cheese melt. If you have the carbs
for it, you can add 1 can of Rotel diced tomatoes with chile or cilantro and
lime for a bit of a kick. Serve with nice induction green salad.
