Disabled & just started induction…well sort of

I have a disability and use a wheelchair and over the years have
just been horrified at how my weight has mushroomed. After my latest
spinal surgery 2 years ago, I rose to an all time high of 255. I
went on Optifast and it took me 3 months just to lose 20 pounds. The
doctor said my metabolism was incredibly sluggish and yada, yada. I
was on 945 calories and because of my size and disability, just
couldn’t do much physical exertion like he wanted me to.
So, I started Atkins yesterday. Had the book for 2 months though,
but was scared to try something else and fail. I saw something on
the Atkins site about the fat fast and decided I better help my body
get into this. I’ve been pretty good so far with it. Although only
1000 calories, I’ve not been all that hungry…plus, the site said
only do it for 4-5 days. Has anyone else ever done it?
I’m determined to make it this time. Just scared though because I
feel like this is my only hope. I just can’t get to 300 and be only
34 years old. I don’t know if my emotions could take that. My dream
is to be able to get into a shape where I can participate in a
disabled bike race…although I wouldn’t race. I just want to know
what it feels like to finish on top.
Has there been anyone out there who just couldn’t do much exercise
because of size or pain when they first started? Will that cause me
to fail again? I was very good on Optifast and I didn’t cheat. I
just got disgusted that after being good for so long, only 20 pounds
were lost. I don’t mind finding some adapted exercise, but right now
I’m still in a bit of pain. But, I still want to be successful.
Sigh…any advice would be appreciated.

My name is Kim & my husband & I are starting Atkins today! It is my
first time doing Atkins, but my husband has been doing it off & on
for several months & has lost about 70lbs. I have a 2 1/2 yr old son
that I want to be able to go to the beach etc with & not feel like a
beached whale. I also have a 5 month old son that is just weaning
off of breastfeeding so I figured it was time to regain control of
myself. I think my hardest part will be breakfast. I am a definate
coffee doughnut lover. I shouldn’t have any trouble with my lunch or
dinner because I have been making meals for my husband minus the
carbs for a while. I anyone has a good breakfast alternative to
bacon & eggs, I would appreciate it.

Scalloped Cauliflower

- Low Carbohydrate Atkins Diet Recipe
1 bag frozen cauliflower
1/4 cup onion, finely chopped
8 oz cheddar cheese, shredded
4 oz heavy cream
salt and pepper
1/4 cup butter
crumbled cooked bacon (optional)
Preheat oven to 350. Run cool water over frozen cauliflower in
collander to separate pieces. Spray large casserole dish with pam
and layer 1/2 cauliflower on bottom. Season with salt and pepper,
then layer with 1/2 onions and thinly sliced pats of butter. Add 1/2
cheese. Repeat layers. Pour cream over and bake 45 min. (Can add
crumbled bacon 10 min before completion).
Serves 4 @ 6 carbs, 3 fiber (3 NET carbs), 456 Calories, 41 fat, 17
protein (bacon NOT included in counts)

Well..i’ve also decided that the scale is evil lol..i am only going to weigh
myself once a week now..cuz now its indicating i am UP a few pounds from the
217.5…i know that weight flucuates during the day…so i am not going to get

Green Chile Beef

1.5 lbs good ground beef
1 tsp crushed garlic
1/2 med onion, diced finely (about 2 oz)
1-2 cans chopped green chiles, drained
1.5 cups finely shredded cheese - cheddar, jack, colby, whatever you like
Brown ground beef, garlic and onions over med. heat. Add green chiles. Stir
well. Add cheese, turn heat to very low. Let cheese melt. If you have the carbs
for it, you can add 1 can of Rotel diced tomatoes with chile or cilantro and
lime for a bit of a kick. Serve with nice induction green salad.

Coconut Macaroons

1 cup shredded unsweetened coconut,
7 packets splenda (or any artificial sweetner),
2 egg whites,
1/2 cup heavy cream,
1/4 tsp vanilla extract,
1/2 tsp almond extract
Mix cream with sweetner and extracts.
Add coconut mix well, let stand 1 hour.
If then, mixture is to dry add small amount of cream.
Preheat oven to 350 degrees. Whip egg whites till peaks form.
Fold whites into coconut mixture. Using tsp place 16 even amounts
on greased cookie sheet. Bake until slightly brown, 12-15 minutes.
1.9 carbs per cookie

Chicken Fajita Salad,

recipe by LOVES DEI
4 skinless chicken breasts
One red bell pepper (4.8g carb 1.3g fiber)
One Green Bell Pepper (4.8g carb 1.3g fiber)
1/2 Red Onion (6.9g carb 1.4 g fiber)
1 head lettuce (11.3g carb 7.5g fiber)
2 tomatoes (11.4g carb 2.8g fiber)
cumin
paprika
chili powder (check to make sure it is sugar free)
1-2 tsp. crushed garlic
black pepper
2T salsa (approx 4 carbs depending on brand)
pinch cinnamon (not much at all, just a “smidge”
Olive Oil
Saute peppers and onions and garlic in olive oil over medium heat until
fairly soft, add chicken and other spices. I never measure these, it’s up to
your
taste.
Generally I use as much chili powder as all the other spices combined. The
ground cinnamon will give the fajitas a very hearty texture - don’t go
overboard or it will be weird.
Serve over lettuce with tomatoes, sour cream, guacamole and cheese as
garnish. Depending on how much of what you use, this should make 4 servings

Beef Taco Filling

I put this over some lettuce, add a few pieces of tomatoe, add some cheese,
sour cream. Best taco salad you ever ate!

1 lb ground beef,browned
1/4 cup water
2 T chili powder
1 1/2 T cumin
1 1/2 T paprika
1 T onion powder
1 T garlic powder
1/8 to 1/4 t cayenne
Combine all ingredients,blending well and simmer in skillet about
5 minutes.

CHICKEN RANCHERO

Servings: 4
2 1/2 Pound(s) Chicken breasts,
14 1/2 Ounce(s) Can Mexican style stewed-tomatoes
8 Ounce(s) Can tomato sauce
7 Ounce(s) Can diced green chilies
1/2 Teaspoon(s) Cumin
1 Clove garlic, minced
2 Zucchini, sliced
Salt and black pepper
Combine all ingredients except zucchini, salt and black pepper in a 4
quart pot. Cover and simmer 45 minutes. Add zucchini and salt and
black pepper to taste. Cover and simmer 15 minutes more. Serve with
cauli-rice if desired
Makes 4 to 6 servings.

Chicken ‘Fajitas’

Serves 4
2 skinless chicken breasts
1 Tbsp Mexican Taco seasoning
8 full-size slices Swiss cheese
1/2 cup lettuce, chopped
1/4 cup shredded Jack cheese
Hot sauce to taste
Salsa Verde to taste
Rub chicken breasts with taco seasoning and let stand for 10 minutes.
Heat heavy pan or a cast iron skillet; cook the chicken till slightly
blackened but not overcooked (about 3-4 minutes per side). Cut into
1/2 inch strips and add desired amount of sauce.
To assemble the enchiladas:
Place a slice of Swiss cheese on a flat surface and place lettuce
about 3/4 of the way down. Layer chicken strips on top and sprinkle
with shredded Jack cheese. Do not overstuff. Fold the lower portion
up, tighten as much as you can, then continue rolling the rest. Cut
it in half on a diagonal and serve with more hot sauce or salsa
verde.
