Hi - My vacation menu
Hello everyone,
I started Atkins last Thursday and went on a much-needed, mommy-only vacation on
Saturday. It was difficult, but I was strong and stuck to the plan. I had a
hard time figuring out what to bring with me on the plane all day and what to
bring with me each day while visiting sites, family, etc. Here’s what I brought
in a little zippered cooler with me every day:
1. Water
2. Baked Chicken legs. (Bought the 24 pack from Costco for $5.00, threw them in
a big ziplock bag with Papa’s Seasoning from Costco, baked them for 1 hour @
350. They made a terrific snack to have on hand and I brought along about 10 of
them in the small cooler. Bonus: I left the rest of them with my husband and
kids while I was gone and they loved snacking on them after school! I’ll
probably keep them on hand all the time now) When the chicken legs ran out, I
bought turkey meat and brought that along each day.
3. Sliced cucumbers
4. String Cheese
5. Mini cheese rounds
6. Boiled eggs
7. Olives (about 5 a day)
ziplock baggies full of ice to keep everything cold
These 7 snack items got me through each day of my vacation. I packed them in my
little portable cooler and they were great to grab whenever I got hungry. When
I went out to eat, I had Buffalo Wings, hamburger patties, or baked fish as my
meals.
For my plane ride home, I didn’t have time to bake more chicken legs so I went
to the supermarket, bought a whole roasted chicken for $3.99 (I had them check
the seasoning they use to make sure it didn’t have any carbs or sugar). I
pulled off the meat, put it in the good ol’ ziplock baggies and put it in my
cooler.
I got home last night from my vacation and jumped on the scale this morning.
It’s been one week since I started last Thursday and I lost 5 lbs. Whether
it’s waterweight or real lbs. — either way, I’m happy I didn’t blow it!
