Diz, I have to break mine apart. I suddenly have a gag reflex … Yick!
Of course I am taking a supplement that you can NOT beak or all of the
insides will spill everywhere so I have to force it down with an Atkins
shake… which tends to help a little bit. Nichole

Parmesan Cream Cheese Wrap

I modified a yummy version of this sandwich to suit us lo-carbers. Last
night my steak on the grill fell through because it was raining so I had
to think quick…
Parmesan Cream Cheese Wrap
Lower carb versions below
1 lo-carb tortilla wrap (I use sun dried tomato shell - 5 net
carbs)
1/2 Teaspoon salted butter (0 Carbs)
3 tbls of Philly Cream Cheese (less than 1 carb)
3 - 4 tbls of Parmesan Cheese (0 carbs)
5 Grape Tomatoes cut in half
1/3 alvacado in long slices or 2 slices of ham (or both if you
prefer)
Melt cream cheese in microwave with butter. Mix in Parmesan cheese then
spread on tortilla shell. Lay on the tomatoes and Alvacado slices and or
the ham slices.
Total Net Carbs (guessing high) 11 if you use the alvacado. or if you
use ham :: 7
Another LOWER carb version,
* instead of using tortilla shells wrap up in a slice of ham and enjoy
* Wrap up in a slice of romaine lettuce
* use as a dip for pork rinds
* Wrap up in Ham and Lettuce leaf and cut into slices for low carb
party apps
And did I mention kids LOVE this Stuff

I couldn’t figure out how a little protien bar could fill me up and
satisfy me for hours… I think I figured out the secret… these things
are so chewy that you have to chew each bite forever and by the time I
am done my mouth is so tired… But they are mighty good….

THIS IS A LOW-CARB VERSION OF AN OLD FAVORITE RECIPE (HANDED DOWN BY DIANE’S
GERMAN GRANDMOTHER).
SHE USED TO MAKE IT WITH FRUIT ON TOP (SLICED APPLES OR PLUMS) - AND IF YOU
ARE ALLOWED THOSE EXTRA CARBS, YOU COULD TRY THAT.
HERE IS HOW DIANE MAKES IT WHEN SHE IS DESPERATE FOR A SWEET THING THAT IS
NOT SF JELLO!
1 STICK OF BUTTER, ROOM TEMPERATURE SOFT
WEE BIT LESS THAN 1/2 CUP SPLENDA or
WEE BIT LESS THAN 1/4 CUP SUGAR TWIN
2 EGGS
1 CUP ATKINS BAKING MIX
2 TSP VANILLA
CREAM THE SWEETENERS INTO THE BUTTER.
BEAT IN THE EGGS.
ADD IN THE ATKINS BAKING MIX AND VANILLA.
SPREAD INTO GREASED PAN (BATTER WILL BE QUITE STICKY AND GLOBBY, NOT
POURABLE).
BAKE AT 350* F FOR ABOUT 25 MINUTES (OR UNTIL A TOOTHPICK COMES OUT OF IT
CLEANLY).
8 SERVINGS @ 3.4 CARBS PER SERVING

Creamy Cucumber Salad

3 medium cucumbers, peeled and thinly sliced
1/2 cup cider vinegar
1/2 cup water
2 Tbsp Splenda
2 green onions, chopped
1/4 cup Bermuda or Vidalia sweet onion, diced
1/2 cup yogurt, sour cream or mayonnaise
Put cucumbers in a non-metallic bowl. Mix together vinegar, water,
and Splenda. Pour over cucumbers, cover with plastic wrap, and allow
to marinate in the refrigerator for 24 hours. Drain cucumbers and mix
in the green onions, sweet onion, and yogurt (or sour cream or
mayonnaise).
