Mexican Chicken Salad

I love this diet… you can “invent” so many fun recipies…
Mexican Chicken Salad
1 Can Chicken (0 Carbs)
1 Haas Avacado (2.2 Net Carbs)
1/2 Cup Motz, Mild Cheddar or Provel Cheese (1 Carb)
2 TBLS Old El Paso Taco Sauce (2 Carb)
Spices to Taste (Garlic, Cumin, Salt an Peper)
4 TBLS of Parm Cheese (0 Carbs)
1. Mash up the avacado in a bowl.
2. Add drained Chicken, Cheese and Taco Sauce. Mix Well. Serve Hot OR Cold
To make it creamier; Add tablesppon of Mayo (0 Carbs), Sour Cream (1
Carb) and/or Melted Cream Cheese (1 Carb)
For a little extra flavor: Add 2 TBLS of your fave lo-carb dresing.
I use Ranch or Blue Cheese. Both by Carb Options (0 Carbs)
Makes 2 servings
