(from Lori, on the DLC Low-carb Recipe List)
2 cups heavy cream
1/2 cup splenda
2 tsp vanilla
Place in a small saucepan and cook and stir over medium heat until
mixture becomes very thick and begins to separate - about an hour.
Pour into an 8″ square dish and refrigerate. Cut into pieces.
These aren’t chewy like traditional caramels, but the flavor is
tremendous.
They taste like rich caramel but melt in the mouth like butter.

If you have a Walgreens near you, they have an awesome water bottle that
looks like the large clear water jugs. This cutie holds the recommended 8
glasses of water. What I do is fill it up at night before going to bed and put
it
in the freezer. Pull it out in the morning and keep it with me all day. It’s
much easier to drink it this way and it really does make it seem like not so
much. When sipping on it here and there, it does go relatively quickly.

This sounds so good to me!
No-Bake Cheesecake
(from BBPD568wyf)
2 lbs cream cheese, beaten till soft and fluffy
1 tub any flavor Crystal Lite–I like Raspberry
2 envelopes unflavored gelatin
2 cups of water
Soften gelatin in cold water then heat water in microwave till gelatin melts.
Add Crystal light to this and beat it into the cream cheese. Chill till
firm–Yummy!!!!!!
(Note from Magic: I made this in a pretty ring mold with Crystal Light lemonade
and served it with a pile of fresh strawberries, delicious!
You could also make a crust from ground nuts, Splenda, and melted butter, if you
were so inclined.)
(for those avoiding aspartame, try unsweetened Koolaid and Splenda in place of
the Crystal Lite)

I didn’t think any tea has calories or carbs, so whats up with diet tea?? I
brew my own and I love ice tea, sweetened with about 1/4 pack of splenda per
glass.

Just when I think I am doing so well, I give in to temptation. I had
a cheesesteak with the roll and french fries today for lunch. I do
not know what got into me. And this morning I was so happy because
this is the lightest I weighed since I gained weight. My scale
finally budges 1 pound. Hopefully this doesn’t effect me too bad.
Help! I need to really stick with this. I wanted to be 133 or
lighter by July 31. at this rate - I do not know if I will be able
to make it. My long term goal was 123 or lighter by the end of the
year. Then I will have been doing this for 1 year and hopefully 50
lbs lighter.
How do you guys avoid giving in to temptation? Any hints. I am
telling you that once I started and never cheated it was so easy but
now that I have cheated and was still able to lose weight it is so
much easier to cheat. I feel horrible afterwards. Both physically
and mentally. I feel like the whole week of being good was just
wasted on that stupid cheesesteak and fries.
I am probably making a big deal out of nothing but just needed to
vent.
