Pants Size…

Sometimes I wonder how tight my clothes actually were. It’s amazing, I
think for a long time I was in denial about how overweight I actually
was. I mean, I have never had weight issues… then I had a baby (not
that it’s any excuse) and started all these horrid eating habits.
Getting pregnant was my excuse to indulge in anything I wanted… 11
O’Clock at night **nudge**nudge** honey, baby is hungry for Taco Bell…
or I’d eat McDonalds for breakfast… I’d eat crap… and yet some how I
refused to see it. Sometimes I still think I am in denial about my
weight… I think what I finally admitted were my crappy eating habits.
Any who… as I sit here and babble… my point is this… I have lost
28 pounds to date (since 6/1/04) and have yet to go down a pant size! My
clothes are loose on me but still not loose enough to go down! I think I
am having “butt issues”… Big rears run in my family… and up until a
few months ago I thought I was spared and was jinxed only with the
“round face” curse. I think I’m gonna have to do more butt exercises to
get it moving. I have lost 3 inches in my waits and only 1/2 an inch in
my butt and thighs (and pleased to say I have gone down a cup size, yay!
God I hate big boobs)!!!!!
Here’s to hoping I go down a pant size by summers end!

Help…
So mornings I wake up and I just don’t feel like having eggs for breakfast.
I have them scrambled, fried, I’ve made the baked muffin eggs…what else is
there??

I get fish from the seafood counter at my grocery store. If you don’t like
fish, you may want to try something like a heavy fish, shark or sword fish.
They have a thicker density than like a sole or other thin white fish. What I
do to really liven up fish is use the dill sauce recipe I got in my Atkins
book. It’s just sour cream, garlic, lemon juice and dill. One of my most
favorite dishes is backed salmon with this sauce on top. To die for.

Chocolate Drizzled Orange Sour Cream CheeseCake

3/4 cup ground almonds (1 1/2 cups before grinding)
1 teaspoon grated orange peel
4 packets Splenda
3 Tablespoons unsalted butter
Preheat oven to 350°F.
Mix Splenda and orange peel with ground almonds; set aside. Melt butter
in microwave or stovetop, then add to nut mixture and stir until evenly
distributed. Spray 9″ pie plate or small springform pan with cooking
spray. Pat nut mixture into pie plate or pan, using a spoon or fingers,
to cover bottom and sides. (If you use a springform pan, all baking steps
in this recipe should include a cookie sheet under the springform pan to
catch any dripping butter and save your oven.) Bake for 10-12 minutes,
being careful not to overcook. Cool on a wire rack.
Filling Ingredients:
2 8-oz packages Cream Cheese (not low fat or fat free)
1/2 cup sour cream
3/4 cup Splenda
1 1/2 teaspoons pure Orange Extract (or 1/2 teaspoon orange oil)
2 eggs
Preheat oven to 350°F.
Combine cream cheese, sour cream, Splenda and extract or oil in food
processor until creamy and smooth. Add eggs, process until well-blended.
Alternatively, mix with standard mixer (cream cheese and eggs should be
room temperature if you use this method to avoid lumps.)
Pour into cooled crust and bake at 350°F for approximately 40 minutes or
until center is mostly set (the center should still jiggle a little when
you take it out of the oven — bake times will vary depending on ovens
and the type of pan you used.)
Allow to cool for 30 minutes on wire rack. Transfer to refrigerator and
chill, covered, at 6-8 hours or overnight.
Topping Ingredients:
1/2 cup sour cream
4 packets Splenda
1 teaspoon pure Orange Extract (or 2 drops orange oil)
1 low-carb/sugarfree dark chocolate bar (such as Carbolite)
1/8 cup sliced almonds
In a small bowl combine first 3 ingredients and whisk until well blended.
Spread on top of chilled cheesecake. Refrigerate for 1-2 hours, covered.
Just before removing from refrigerator, melt chocolate bar in microwave
until it resembles a chocolate sauce, but try to avoid letting it
bubble/boil. Cool for approximately 30 seconds. Remove cheesecake from
refrigerator; drizzle top with chocolate, making pretty and random
patterns. Quickly sprinkle with almonds while chocolate is still soft.
This makes a very elegant dessert and stores refrigerated up to 10 days,
or frozen for up to 3 months.
Serves 8-10; 5-7 grams per serving (depending on piece size.)

Three Layered SF Jello-O

2 small boxes SF Jell-O any flavor
3 ounces cream cheese — softened
4 tablespoons heavy cream
Pour 2c hot water over both boxes of Jell-O.
Stir to dissolve.
Add cream cheese.
Beat with a mixer until the cheese is completely mixed in.
It will be “frothy”.
Stir in 2 cups cold water.
Whip 4 tbsp of heavy cream until stiff.
Lightly whisk the whipped cream into the Jell-O mixture.
Cover and refrigerate until firm.
It will separte into 3 layers.
Clear Jell-O on the bottom.
A flavored cream cheese layer in the middle.
A flavored whipped cream layer on the top.
A day without laughter, is a day wasted.

results of blood panel

I got my blood panel done today and my chloresterol level was 262. My
bad lipids were 182(high) and my good 58(normal). Sugar was fine and
so was my kidney test-Dr. wanted to run a test on my protein level in
the kidney to make sure I wasn’t having any probs there due to the
diet. He said he had one patient who was having kidney problems
because of all the protein in the diet. Now I have to make a decision
on whether to stay on the diet and lose weight or go off and take care
of my chloresterol. Or can I stay on AND lower my level? Anyone with
suggestions, please send.

Per Atkins shopping guide, garlic is okay in phases 1-4. 0.9carb grams per

question about cheese

ok……I was told a cube of cheese is 1 oz. Which means you can only have 4
cubes of cheese a day, right? Well I was looking on my package of cubed
cheese andit says 8 pieces are a serving and there are 50 cubes in the package
and
the package weighs 8 ounces and there are 7 servings in the bag. So, that
would not make a cube of cheese an ounce! Help, I want to know the truth!!
