Mozzarella Veggie Salad

1 pint grape or cherry tomatoes
2 cups fresh broccoli florets
1 cup fresh cauliflowerets
1 cup cubed mozzarella cheese
3/4 cup balsamic vinaigrette
Combine all ingredients.

CRAB SPREAD

7 ounce can of crab meat, drained and flaked
1 teaspoon. grated onion
1 stalk celery, chopped fine (about 1/2 cup)
1/2 cup blended cottage cheese
2 tablespoons cream cheese
1 tablespoons lemon juice
1 teaspoon horseradish
1/2 teaspoon Worcestershire sauce
salt and pepper to taste
ΓΆΒΆ Mix all ingredients well and chill. Slice cucumbers or
zucchini into 1/4 inch rounds; place in ice water for 1/2 hour to
crisp. Dry and top rounds with 1 teaspoon crab meat
mixture. Sprinkle lightly with paprika and garnish with
parsley sprigs. One serving equals two tablespoons of
spread. (Six rounds) 3 grams protein, and 0.4 gram
carbohydrates. Works well also with any other foods for
dipping.

Back to basics

Hi all .. Been away for a while .. But back .. and thinking that the
best thing for me to do is break this stall .. So I am going back to
basic induction for a few weeks and see if that helps me at all .. I
lost 74 pounds since March 15th .. But in the past month/6 weeks
have lost nothing .. So I am back .. Wish me luck !!

Once a month …

… our office gets danishes and cheesecake… OMG! They got different
kinds this time and they are sitting in the main room… right there…
beckoning me to eat them! There is some cheese cake twisty cinnamon
pastry… Ahhh!!! HELP ME!!! I cooked some bacon and it’s just not
cutting it….!
Sorry, had to whine.

This is what I call “Egg Muffins”
12 eggs
1 lb breakfast sausage
8 oz cheeze.
Brown sausage, grate cheese. Break eggs into bowl, mix all the incredients.
Pour into 12 muffin tins ( I use papers) bake at 350 for about 40 minutes. I
will be making up a double batch here in a minute to take with me out of town
this weekend. :-)

Baked Breakfast Custard

- 4 servings
8 eggs
4 oz cream cheese, softened
1 teaspoon melted butter
1/2 cup heavy cream
4 pkts sweetener
1/2 teaspoon cinnamon
1 tsp nutmeg
Spray a 9″ x 11″ baking dish with cooking spray.
In medium bowl, beat softened cream cheese with hand mixer on lowest speed
until smooth and creamy. Add cream, sweetener, and spices, mix well. Add
butter, blend in (if you add the butter with the previous ingredients, the
spices will clump). Last, add eggs and beat on low speed until well mixed.
Immediately pour into dish, scraping bottom of bowl as spices will settle.
Bake at 375 degrees for approximately 25 minutes or until toothpick comes
out clean. Sprinkle top with a pinch of nutmeg while still warm and puffy;
custard will settle as it cools.

Crispy Baked BBQ Chicken

1 C pork rinds, finely crushed
1 tsp chili powder
1 tsp Brown sugar substitute equivalent
1/2 tsp garlic powder
1/4 tsp oregano
1/8 tsp cayenne pepper
1 whole chicken, cut up
1/4 C butter
Preheat oven to 375
Combine crumbs and spices. Salt and pepper chicken pieces. Brush butter on
each piece and roll in crumb mixture. Put chicken, skin side up, not touching in
baking dish. Sprinkle with remaining crumb mixture. Bake uncovered for 50
minutes. Don’t turn.
