BAKED EGGPLANT WITH CHEESE
1 medium eggplant, peeled and diced — about 17 net carbs for one
eggplant
2 eggs, beaten
1 cup grated sharp cheese
Salt and pepper
1/4 cup chopped pimiento
Boil eggplant in salted water until tender. Mix with eggs, cheese and
pimiento and bake in small buttered casserole at 350 degrees F for
half an hour or until firm.
