Pepperoni Pizza Salad

Adapted From: Taste of Home June/July 2002
10 plum tomatoes,chopped
3 green peppers, cut into 1″ pieces
2 cups shredded mozarella cheese
1 (3.5 oz) package sliced turkey pepperoni
1 can sliced black olives, drained
1 cup sliced mushrooms
1/4 cup chopped onion
1/3 cup tomato juice
1/4 cup vinegar
1/4 cup olive oil
1 garlic clove minced
1/2 tsp basil
1/4 tsp pepper
1/2 cup slivered almonds
In large bowl, combine tomatoes, peppers, cheese, pepperoni, olives and
onions. In small bowl, combine juice, vinegar, oil, garlic, basil and pepper.
Mix
well. Pour over tomato mixture and toss to coat. Cover and refrigerate for
serveral hours. Sprinkle with almonds just before serving. Makes 12-14
servings.
