Mock Danish

I copied this from the lowcarb.ca forum, I usually use about 1 teaspoon of sf
jam in the centre and cook them in the “disposable ” round ziploc containers
so they are about the size of a real Danish.

2 oz cream cheese (soften in microwave)
1 egg
1 tblsp splenda
1 tsp lemon concentrate
1/2 tsp vanilla
Mix softened cream cheese and egg.
Add remaining ingredients.
Microwave on high for 2 minutes.

Variations and Hints:
I added some 50 fifty jam in the centre before nuking.. delicious. It tastes
better if you don’t totally mix the egg and cream cheese; you get little
pockets of cream cheese. We had it again this morning but with cinnamon and
some
butter in the centre when it came out of the microwave (omitted the lemon).

Maybe a better idea would be to list what YOU are eating and maybe some of
us might be able to give you a few pointers…i generally eat 3 scrambled
eggs and 4 strips of bacon OR and omlette with 3 eggs, 1/2 an avacado, about
a tablespoon of tomato, diced and lotsa cheese…Lunch is usually chicken or
tuna salad and some spinach ( i love spinach)or left overs from the night
before tossed into a salad….dinner i usually have taco salad (dont use the
packaged seasonings, actual spices taste soo much better), or fajita type
stuff..sliced steak or chicken sauteed with red/green peppers and onions and
spinach and mushrooms and spices, or the same veggies sauteed with spicy
italian sausage and NO spices…or i have stirfried beef and broccoli, or
roasted chicken or thinly pounded chicken breast stuffed with herbed cream
cheese and bacon or “heroin” chicken and veggies i tend to stick mostly to
dark green leafies. i sautee spinach with olive oil and garlic, i sauteed
zucchini and mushroom with olive oli and garlic and also add in some dill
and red pepper flakes, i sautee baby bok choy in olive oil and a little
butter and add garlic and red pepper flakes or i have a great recipie for a
brocoli salad that i’ll have to post once i find it or i have lasagnamade
with zucchini or eggplant. for snacks i have whipped cream, or pepperoni
crisped up in the mirowave, or cheese cooked until hard in the microwave
(tastes like a giant ritz cracker to me) i also make these as a base for
“pizza” with low carb tomato sauce (really check the ingredients for sugar)
and pepperoni. or i have pork rindswith sour cream and taco spices (mainly
cumin with some paprika, ONION salt (it does need the salt or else its very
bland), cayanne pepper and chili powder), beef jerky….raspberry cream
cheese bites(SF rasperry jello, boiling h20 and creamcheese). i might also
have a japanese cuke salad as a snack or left overs from supper…etc
but really, post your menu and we can all see if we spot the culprit or
something that maybe stalling you

If we don’t ask questions, we won’t learn. And all of us have to

um, Dez? you aren’t really supposed to be drinking diet pepsi…if you need
soda pop you should be drinking something caffiene free and made with
sucralose (splenda). Aspratame stall LOTSA people and if it doesnt stall, it
usually slows weightloss waaaaay down. If you’re worried about energy and
thats why you dont wanna quit it, i have to say that eating properly has
given me tons more energy than caffiene ever has and i loooooooove coffee
and soda pop.

Pepperoni Pizza Salad

Adapted From: Taste of Home June/July 2002
10 plum tomatoes,chopped
3 green peppers, cut into 1″ pieces
2 cups shredded mozarella cheese
1 (3.5 oz) package sliced turkey pepperoni
1 can sliced black olives, drained
1 cup sliced mushrooms
1/4 cup chopped onion
1/3 cup tomato juice
1/4 cup vinegar
1/4 cup olive oil
1 garlic clove minced
1/2 tsp basil
1/4 tsp pepper
1/2 cup slivered almonds
In large bowl, combine tomatoes, peppers, cheese, pepperoni, olives and
onions. In small bowl, combine juice, vinegar, oil, garlic, basil and pepper.
Mix
well. Pour over tomato mixture and toss to coat. Cover and refrigerate for
serveral hours. Sprinkle with almonds just before serving. Makes 12-14
servings.

Hamburger Pizza

1 lb Hamburger
1/4-1/2 c
low-carb pizza sauce
any of your favorite pizza toppings
mozzarella cheese
Press Hamburger into bottom of pie plate or casserole dish. Top w/
sauce and toppings. Bake at 350 for 30-45 mins until hamburger is
cooked through and cheese is melted and bubbly.

BAKED EGGPLANT WITH CHEESE

1 medium eggplant, peeled and diced — about 17 net carbs for one
eggplant
2 eggs, beaten
1 cup grated sharp cheese
Salt and pepper
1/4 cup chopped pimiento
Boil eggplant in salted water until tender. Mix with eggs, cheese and
pimiento and bake in small buttered casserole at 350 degrees F for
half an hour or until firm.
