TRAVELING IDEAS FOR LOW CARB LIFE

Sunday, November 26th, 2006

Pack some cans of tuna with can opener. In the cooler put
some cream cheese, celery and a head of lettuce, some
hard boiled eggs. Take one handy jar of âHellmansâ or
âBest Foodsâ Mayonnaise.
A large plastic salad bowl and a Knife and some sort of a
plastic small cutting board. Along with a few bags of pork
rinds and some Wasa crackers. Be careful with the pre-packaged
sliced meats, Carbs can add up. Maybe make
hamburgers or roast some beef a day or two before and
freeze, pop it in your cooler with a jar of spicy mustard for
roll ups. Make a loaf of Atkins protein bread for a few
slices with your morning decaffeinated coffee ( the whole
loaf is 18 grams), spread with butter. Make some home
made beef jerky, be sparing with the salt, youâll get
enough of that in the pork rinds.
Be careful with the quick foods those carbs creep up on
you, cheese, packaged meats, nuts etc. Eat these in small
amounts.
Drink lots and lots of water!!! ( although that means lots of
bathroom visits , but worth it.)

Spicy Chicken & Spinach Casserole

Sunday, November 26th, 2006

3 cups cooked, diced chicken
10 ounce package frozen chopped spinach, thawed and drained well
1 small onion, chopped
1 tablespoon butter
1/4 cup canned pickled jalapeños, roughly chopped (1 ounce can)
8 ounces cream cheese, softened
1/3 cup sour cream
10 ounce can Ro-tel tomatoes, drained (tomatoes with green chilies)
1/4 teaspoon cumin
1/2 teaspoon chili powder
8 ounces cheddar cheese, shredded
Mix chicken and spinach in a greased 2 1/2 quart casserole. Meanwhile,
sauté the onion in butter until tender; add to chicken. Stir in all
remaining ingredients and mix well. Bake, uncovered, at 350º 40-50
minutes, until hot and bubbly.
Makes 6-8 servings
Per 1/6 recipe: 484 Calories; 36g Fat; 35g Protein; 7g Carbohydrate;
2g Dietary Fiber; 5g Net Carbs
Per 1/8 recipe: 363 Calories; 27g Fat; 26g Protein; 5g Carbohydrate;
1g Dietary Fiber; 4g Net Carbs
This is delicious! It’s a chicken version of Mexican Spinach &
Hamburger Casserole and I think I may like it even better.

Cheese Blintzes

Saturday, November 25th, 2006

For the crepes:
I just use the crepes/pasta recipe in the Atkins cookbook and add a few
things:
3 eggs
1/2 cup water
1/3 cup soy flour
1 Tbsp oil
Oil for frying
1 tsp vanilla
1/8 cup splenda
For the filling:
1/2 cup cottage cheese, creamed in a blender
8 oz cream cheese, room temp.
1 tsp vanilla
1/2 cup splenda
To make crepes:
1. Blend all ingredients in a blender
2. Heat 1 1/2 Tbsp oil in a crepe pan or small egg pan. (Each crepe will
require re-oiling pan.)
3. Pre-measure 3 Tbsp of egg mixture into a small measuring cup. Pour into
center of hot pan. Tip pan so batter spreads evenly. Fry for approx 1 min on
each side. Place on wax paper, separating each crepe with a layer of wax paper.
4. Repeat process until all of batter has been made. Should produce 8-12
crepes.
For the filling:
1. Put all ingredients in a blender. Blend until creamy.
2. Spoon 2-3 Tbsp into center of crepe. Fold burrito-style, folding sides in
so it soesn’t leak out. They should look like flat rectangles. (You can freeze
them at this point, and fry them later)
4. Fry in butter, seam-side down first, until browned and slightly crispy.
Flip and fry other side. Serve hot.
These are so versatile! You can mix and match. Add cocoa powder or chocolate
extract to the crepe recipe. Or add fresh strawberries to the filling in the
blender.
You’re just jealous because the voices only talk to me.

[ atkinsdietinduction ] Re: Help!! Any suggestions

no no nono NOOOOOO!!!
Gina….
go to fitday.com and enter you meals in there….your goal should not only
be to stick to 20 carbs a day you should also be trying for these
statistics….
Calories - 10-12x your weight in calories — 200 = 2000 to 2400 calories
60-70% of these calories should be from fat
20-30 % should be from protien
5-10% should be from carbs
also BE SURE to take measurements…LOTS of times the scale isnt moving but
you’re losing several inches. Also mant people find that at their time of
the month, their weight stays the same or even goes up and then afterwards
they get a little WHOOOSH! meaning they drop a few pounds right after….its
really important that you keep you calories to at LEAST 10x your body
weight…it tells you’re body that it isnt starving and it doesnt need to
store any fat.
im sure i sound redundant saying this for the umpteenth time but these are
really import figures that i think everyone should know…if y’all have
heard it enough, just tell me to shut up!!! lol

Honey Baked Ham?

Saturday, November 25th, 2006

Anyone know the nutritional content of a honey baked ham? I would
assume it has more carbs than I should have (without the glaze of
course), but Im not sure… and hoping its legal.
Thanks.

Saturday, November 25th, 2006

Linda,
i love lattes too, unfortunately and decaf grande breve latte from starbucks
is 20 carbs….what i did was buy a little milk frother (a cheap one from
walmart) and make my own lattes with heavy cream AND decaf of course. i also
use stevia to sweeten it and i personallly think stevia is the perfect
sweetener for coffee. it really enhances the flavour for me. Gee, think i
love coffee?

Induction for 5 weeks now

Saturday, November 25th, 2006

Hi, I have been on iduction for 5 weeks now. The first 4 weeks went
great. I lost 19 pounds and have felt great. This last week has
been tough, I wasn’t losing and couldn’t figure out why. I guess it
must have just been one of those stalls that I keep hearing about. I
weighed this morning and have lost another 2 pounds, finally. I was
getting a little discouraged but didn’t give up and now I’m losing
again. I think I first I was thinking that I would be losing that 8
or 9 pounds a week till I got to my goal weight, what was I
thinking? Impossible, but at the rate that I am going it won’t take
all that long. I definitely feel so much better than I did before
this WOE. Thanks everyone for all the posts, they have kept me in
line. Good luck to everyone.

When to restart induction phase

Friday, November 24th, 2006

Hi, I am only on day 2 of induction and I am not having a problem
with it so far. I don’t plan on weighing myself until I have done
my first week.
My question is: If one were to cheat on the program, how much
cheating would it take before you would have to do induction all
over again? Would one day of cheating require induction to be done
again or does it take a few days? I know cheating stalls weight
loss but if you didn’t do induction again, would you still lose
weight if you cut back on the carbs?
