All definitions of organ meats that I have found refer to them as *internal*
organs. Just because skin is considered to be an organ doesn’t
automatically also make it an organ meat. I can’t find a single reference on
the web
that includes skin as an organ meat. If you have a source on the web, I’d love
to see it.
For instance, while an organ donor may donate their eyes, that doesn’t make
eyeballs organ meat in my book.
Pork rinds are meat, not organ meat. Go ahead and enjoy them as such.
