HI! I am Caren. I am a 42 yr old married mother of 7 living in the Orlando,
Florida area. I restarted Atkins last Monday…and am also doing induction.
I am presently re-losing the weight I ,unfortunately,regained several months
ago while binging for 3 months : ( . I had lost 30 pounds and regained all
but 2 of them..so the battle begins again. I do feel I learned a very valuable
lesson though..I must commit to this being a new WOE for me or it will all
come back again.My long term goal is to find and learn how to make substitute
low carb foods I love as much as the high carb ,sweet and starchy foods that
got me here to start with! I am sure everyone will have a wealth of
information for me to take advantage of. I would,long term., like to lose
about 40
more pounds to get to my goal. Right now my first goal is just to get back
where I was before I fell off the wagon so badly!! Look forward to joing you
all!

Another New Member Intro

Hi Everyone!
I’m delurking after about 10 days to say hello! I have been eating low carb
for over 2 years now .. I started in Fall of 2002 (day after Thanksgiving)
and lost about 17 pounds VERY slowly. I got discouraged because all my
list-buddies lost about triple that in the same time, so I stopped counting
and stopped Fitday. I maintained my loss over 1 1/2 years (which was a
MIRACLE in my world), and gradually grew pretty lax. Then, I finally found
out what was ‘wrong with my body’. I spent over a decade eating VERY little
(500 - 800 calories), working out, and watching my weight creep up. I
worked with doctors and trainers, who would all snicker and insist that I
must be eating *more than I thought*. (Can you imagine HOW INSULTING that
is?!??) Until, by sheer chance, I clicked a wrong link on the pc and found
myself listening to an archived radio show talking about Wilson’s Syndrome.
They listed symptom after symptom of mine. I was like a dog after a bone
from that moment, and though it took an agonizing 9 months to finally find
someone willing to take a chance and treat me, I am BACK!!!
Through this entire journey, I know that Atkins is the only lifestyle for me
and MY body chemistry. I have accumulated a considerable amount of
information and knowledge in this lifestyle, as all of us who follow the
program do. The final test was to get over the fear and start again. This
I started on Jan 3, and so far I have lost 6 pounds in 10 days. When I
first started Atkings, I lost 6 pounds on 14 days of induction, so my goal
is to beat that and do better (I KNOW, 6 pounds is SUPPOSED to mean that you
have an average metabolism, but after that initial mostly-water loss, I was
losing in *ounces* per week instead of pounds!) I pray that this time I
can be a *normal* loser. I have set a goal of 21 pounds by March 15, which
is when my family and I are going on a Spring Break. (Keep in mind that I
lost 17 pounds last time after 7 months - strict induction, not a single
cheat!). It’s a huge mini-goal for me … huge *mentally* as well as
physically.
Anyway, it is nice to be a part of this group, and I look forward to
supporting and being supported! Anyone who wants to Buddy - up … feel

Breakfast Muffin Recipe

Breakfast Muffins Preheat oven to 350°
Makes about 16, depends on the muffin tins you use
12 eggs 1 lb breakfast sausage 8 oz cheese (I use Cheddar)
Salt and pepper to taste.
Brown the sausage, grate the cheese. Mix all together in a large bowl.
Pour into greased, or Pam sprayed, muffin tins ( I haven’t tried it, but maybe
you could use the cupcake papers) bake at 350 for about 25-35 minutes.
You can add other things that you might put into an omelet, if desired, but this
is the basic recipe. I make the whole batch, then refrigerate them, (after
cooling first), or freeze. I just pop one in the micro, when I need a quick
breakfast, lunch, or whatever for about 15 seconds. You can eat them cold, but
I prefer them warmed up.
They’re yummy, and surprisingly filling.

Tomato substitutes

Shoshana, wondering if low carb tortillas taste good.
I guess it all depends on the recipe. If you are looking for an alternative
to tomato sauce, you could always puree another vegetable that you like or
use beef or chicken broth.
If it’s tomato used as a vegetable in a recipe, then just replace it with
some other veggie, perhaps a zucchini or a squash.
Like I said, it all depends on the recipe. If you have a specific one you
are trying to find a sub for, post the recipe and maybe we can find something
suitable for you?

Fishy Fish….

I am not a fish eatter… Oh I enjoy (ok, I LOOOVE ) my sushi and I’ll
even eat fresh salt water fish (Shark, Tuna … the real stuff, etc…
)….. I can not stand cat fish, cod, and worst of all… do NOT give me
canned tuna…
HOWEVER! I picked up a packet of Starkist Tuna Creations (the Herb and
Garlic) and attempted to eat that… OMG… It’s some aweomse stuff!
VERY good and it has no carbs! Chill it and eat it right from the packet
or put it on a salad… even a lo-carb wrap. Yummy stuff!
Just thought I’d share my recent discovery…

Nut Butters

good taste. I would rather go without than deceive myself in that way.

What works for us (I don’t use them myself, but my little girl does) is to
store them upside down in the fridge, and then the oil seems to get more
evenly distributed. When you turn them right side up to use them, just give it
a
little stir, and then put them back in the fridge upside down.

I have to admit something too…..day before yesterday was horrible for me
with cravings. I ate 4 tsp. of peanut butter and 3 bites of a piece of
bread. I was in ketosis but when I checked yesterday I wasn’t. While I
didn’t “go crazy” and eat a TON of stuff……it was still enough to make
me feel down and knock me out of ketosis. But, I did start back fresh after
that, and I know I’ll be in ketosis again soon. I DID throw away the peanut
butter (extra crunchy yum) so that will help. I no longer buy the bread I
love so much and I don’t like white bread at all…..so at least I’m
learning!

The important thing is to learn from our mistakes, and move forward from
there.
Drink some extra water to flush out your system and get back on track. You
are doing fine.
