February Challenge

We used to do this some time back…
since I have seen so many c”goal” posts… let’s see who the biggest
looser can be for the month of February; or atleast reach a set goal
weight!?
As for me? I am setting mine at 10 lbs by months end :) Nichole

Potuck Dessert Recipe

Someone was looking for a dessert that they could take and eat at a
gathering. I found this one at the Atkins site. I think a serving is
1 macaroon and it has 1 gram of carbs…
Coconut Macaroons
If you like your macaroons crisp, eat them hot out of the oven. If
you prefer them chewy, make a day ahread.
Oil spray for greasing baking sheets
4 egg whites, at room temperature
2/3 cups granular sugar substitute
1/2 teaspoon vanilla extract
1/4 teaspoon salt
2 cups grated unsweetened coconut (about 5.5 ounces)

1. Heat oven to 325°F. Spray two baking sheets with oil spray.
2. With an electric mixer on medium speed, beat egg whites until
medium peaks form. Gradually beat in sugar substitute, vanilla
extract and salt. Turn speed up to high and continue beating until
stiff (but not dry) peaks form.
3. Using a rubber spatula, fold in coconut. Drop tablespoon-sized
mounds of mixture onto prepared baking sheets.
4. Bake 15 minutes. Cool on sheets 1 minute before carefully
transfering to wire racks to cool completely.

I think that I will be a life long Atkin’s eater. I feel so much
better now that caffeine, white flour, and sugar are out of my life.
The first 3 days I didn’t feel good–it felt like the flu. But after
that, my energy level went way up, I wake up early, rarin’ to go, I
don’t feel starving and crazy all the time. I feel like I’m finally
a “normal” person. I try not to talk about it all the time in front
of my friends. Everyone I know is so against Atkins. They believe
every bad thing they hear, won’t check out the real facts, etc. My
husband and sons are supportive, but I can tell they are just
waiting for me to get over this “fad.”
Induction is a strange phase, but an important one. I can’t believe
that it works and that it is alright. But I can feel my fat melting.
Everything is shrinking. My arms are shrinking, my face is
shrinking, my hips and ribs are starting to emerge–already. It is
the best thing that has happened to me since I had my kids.
No matter whether I lose all the weight in 8 months or 8 years or
even never, the way I feel now is worth getting the crap out of my
diet. I look forward to being able to add my veggies, eventually
fruit and maybe some whole grain back to my diet–but for now, I am
not hungry, and I’m not suffering like I did on so many diets out
there.
I wish Dr. Atkins were alive to see the new food pyramid. Wouldn’t
he have some words to say about it? I think within our life time we
will see him totally vindicated.

Hi all, it’s been awhile since I’ve been on, but my life can get a
bit crazy at times. I always go back and read everything to keep up
on all thats going on. I am doing ok I’ve lost a few pounds (still
don’t have a scale so who knows…)but my clothes are looser and that
is a good sign. I feel like I have a lot more energy.
One BIG thing that has happened for me is that my guy surprised me
with a gym membership for both of us. He has been less then
supportive with my Atkins WOE and thinks as long as we are active
I’ll drop the pounds. He loves life and LOVES food. But after the
last few weeks watching me choose my foods and seeing my desire to
really do this he changed his mind and now is supporting MY WOE not
for himself but for me. Friday he surprised me with a Ballys
membership and told me he wants to be apart of me reaching my goal. I
loved that he wants to cheer me on.
I am hoping with him on my side now that this will get easier. I know
that he doesn’t want to do Atkins and I don’t pressure him in any way
to do it but to finally have him understand that it is important to
me makes a huge difference. At least he wont be tempting me with junk
food anymore!

I’ve been on here since the 9th of January. Everyone has been
helpful to me. But if you haven’t read Dr. Atkin’s New Diet
Revolution, you really really need to read the book like your life
depended on it. Induction is a little tricky. For example, everyone
knows you can eat meat, cheese and eggs, so they assume that if you
just eat this stuff you’ll be okay. But you need to find the level
of carb consumption that you lose best at and eat as much as your
body can allow. I found my losing level to be 15g. If I go under
that I feel weak, and I start having problems. And almost everything
else in the world except unbreaded meat has carbs. Cheese has carbs,
eggs have carbs. So you can’t just fill up on hard-boiled eggs…
Once you find your Critical Carb Level and get used to eating at it,
the WOE gets really easy and quite satisfying. But if you think you
can just go to the store and buy anything that says “low carb” on
it, you’re in for disappointment. If you can’t get the book, go to
the Atkin’s Official Website: www.atkins.com It has a lot of the
book published there.

New here and to Atkins

Hello my name is Amanda and I started ATkins like a week ago. So far
it has been easy to stay on track but I am new and hope I have
enough will power to stick with it. I even made my kids chocolate
chip cookies last night and didn’t want one and pizza the other
night and didn’t want that either. So I think I may be doing better
than I thought. I’m 29 and am 5′7″ and weigh 186 (but have lost 3
pounds in the last week so down to 183 now)
I’m hoping that by joining her I will make some great friends and
get some great support. Thanks.

It must be the day for “feeds” at work. My school had their monthly
“potluck” lunch today where everyone signs up and brings a dish. I have
to tell somebody how proud I am of myself. There were tons of desserts,
soups, pastas, etc. I brought a low carb lemon cheesecake and I only ate
1 pickle, 2 celery sticks, and 2 pieces of cauliflower. I brought boiled
shrimp from home and had that instead of all the “bad” stuff. I can’t
believe I did it. Someone brought my absolute favorite dessert, Texas
sheetcake, and I didn’t have any. WOOO HOOO!!! Patting myself on the
back. (Does that count as exercise :-)).
Anyway, I just had to tell somebody. Thanks for listening.

Hello New Here….

Hello… My name is Jaime .. I live in Sioux City, Iowa area.. I am
married for almost 5 years now and i have a 3 1/2 little girl. I
have been on the low carb deit now for about a month. I have only
lost alittle do to that fact that i had to stop for a week do to a
family member passing away.. i was on this a few months back and
lost 20 pounds in a month 1/2.. I know it works if u can stick to it
and do what u have too.. This time i am doing things alittle
different.. I am working out more at the YMCA and drinking alot..
So, i am hopping this group will help me keep at it.. I will post a
picture of me soon..
